Chesapeake, VA – Catherine Ellis Crabb, born on January 27, 1953, in Portsmouth, Virginia, passed away peacefully on June 12, 2025, surrounded by the love of her children, at Chesapeake Regional Medical Center, at the age of 72.
Cathy dedicated much of her life to serving others, acting as a bonus mother to many as well as a sounding board and safe space to all. Throughout her life, she enjoyed crafting, camping, people watching, and spending time with the ones she loved most. Most recently, she served as a devoted cafeteria worker within the Chesapeake Public School System, where she touched the lives of countless students and colleagues with her warm smile and nurturing spirit. She always kept cash in her pocket to treat the kids to ice cream to brighten their days.
A woman of deep compassion and unwavering generosity, Cathy was known for her selfless, loving, and caring nature. She was a member of the Fraternal Order of the Eagles, where she found camaraderie and purpose among friends, some of which she considered family. She could often be found “donating money” to the slot machines at the Eagles Club- and loved coming home to show off her winnings!
Family was the cornerstone of Cathy’s life. She cherished every moment spent with her beloved children, Ashlee Chapman and her husband Kelley Chapman of Charlotte, NC, and Kalyn Monreal and her wife, Sity Monreal, of Chesapeake, VA. Her two grandchildren, Sawyer and Laken, were the absolute light of her life. She loved to watch them rock climb, play basketball, dance, do gymnastics, and jump at the jump parks. Truly, she loved to just be in their presence. While Cathy went by many names, including Cat Crabb, and Momma Crabb, her most cherished title was Nonnie to her grandchildren.
Cathy found great happiness in gathering with family and friends, especially during holidays and vacations, which she treasured as a time to be surrounded by loved ones. Her warmth and kindness left an indelible mark on all who knew her.
She is preceded in death by her parents, Eddie Lee Ellis and Neubon Thomas Ellis. Catherine leaves behind a legacy of love and devotion that will be carried on by her surviving family and friends.
A Celebration of Life service will be held on Sunday, August 10, 2025, from 10 am – 12 pm at Back Bay Brewing Co: Farmhouse, 1805 Kempsville Rd., Virginia Beach to honor and remember the beautiful life she lived.
Cathy will be dearly missed but fondly remembered by all who had the privilege of knowing her. There are good people in the world, and there are top tier- Cat Crabb was the top of the top tier. Her spirit will continue to inspire those she leaves behind. Cremation Society of Virginia, Chesapeake Office is assisting the family.
